Plancha
The best wood that produces the most flames and the least smoke is beechwood. A combination of oak and beech is commonly used.

 

If your wood is not dry (humidity should be less then 20%), it will also produce a lot of smoke and burn poorly.

 

Make sure not to use scrap or softwood. Large pieces of wood are not recommended.
Use small pieces of wood and build a pyramid shape. Never add a lot of wood to the fire at once, as this will result in more smoke and less heat.
The temperature varies with a well-burning fire, ranging from about 300 degrees on the inside of your griddle to 160 degrees on the outside.

 

You can use cedarwood planks to halve the temperature of your cooking surface and keep ingredients warm.

 

Adjusting the distance of your ingredients from the fire or adjusting the position of your burning fire in the bowl is sufficient to change the cooking temperature.
The main causes of smoke are:

 

• Wet or partially dry wood;

• Oversized wood blocks;

• Adding too much wood at once, causing the fire to smother;

Charcoal is the most recommended fuel for a Kamado grill. It imparts excellent flavor to dishes and allows you to control the temperature precisely by adjusting the airflow.

Dry wood is the most recommended fuel for a Plancha BBQ. Using hardwood (like oak) you have a long time fire and has a subtle aroma from the smoke. Using wood from a fruit tree gives you different aromas, however they burn more quickly. The key is to use dry wood with a maximum of 20% moisture.
